peanut butter

Almost a deal breaker. No peanut butter in Colombia.

So, we have learned how to make our own.

AZ’s Peanut Butter

full of all the good stuff – all measurements approximate:

2 cups roasted peanuts

2 tablespoons vegetable oil

2 tablespoons honey

1 teaspoon salt (or no salt if you are using salted peanuts)

Ground flax seed (optional)

Sesame seeds (optional)

Blend all of the ingredients in a food processor until smooth.  If it seems too dry, add more liquidy stuff.

Tip: the ‘making’ is more fun with an ice cold michelada, or beer with rock salt and lime.

For some reason, there doesn’t seem to be any concern about nut allergies here. I have been sending nutty granola bars and, get this, peanut butter and jam sandwiches to school with the kids. Dreamy, right?!
